Can PKD Patients Eat Pizza Crust

For PKD (Polycystic Kidney Disease) patients, they can not eat what they like as normal ones for blind eating may stimulate renal cysts to grow faster. Pizza is a common and delicious food through out the world. Can PKD patients eat pizza crust?

Pizza crust is a baking or pizza stone with mixed carbohydrate, meat, cheese, vegetables etc. However, many of the supplements are harmful for your polycystic kidneys.

Firstly, most pizza crust contains much fat, such as cheese, butter and carbohydrate etc. High fat food can cause a delay in the absorption of the carbohydrates for 2~3 hours after dinner which can cause a 8-hour elevation of blood sugar level.

Secondly, pizza contains many seasoning include salt. All pizza crusts are high in salt which can worse your kidney conditions and accelerate the decline of kidney functions.

Thirdly, the meat on pizza is mostly roasted meat or salty meat which stimulate your kidneys and burden kidney’s work.

Fourthly, many people tend to drink a cup of coffee when they eat pizza crust. This is a bad habit for patients with PKD. Coffee contains much caffeine which can stimulate cyclic AMP and cause cyst growth.

Thereby, pizza crusts should be avoided or on the limited diet list for people with polycystic kidneys.

● 1 cup water

● 1/4 cup canola oil

● 3 cups all purpose flour

● 1/4 teaspoon salt

● 1 package rapid rising yeast

The process of your pizza crust.

1. Preheat oven to 450º F.

2. Pour water into a measuring cup and heat in microwave to 120º to 130º F. Add canola oil and set aside.

3. Combine 2 cups flour, salt and yeast in a large bowl. Add warm water and oil and stir to form the dough. Stir in an additional 1/2-cup flour.

4. Place dough on a floured board. Sprinkle with flour and knead dough 5 to 6 minutes until smooth and elastic. Add more flour as needed to prevent sticking. Divide in half and form 2 balls.

5. Cover dough and let rise for 10 minutes. Punch dough down and form each ball into a flat 12" pizza shape. Place on pizza pan or baking stone.

6. Spread sauce over each pizza, add pizza toppings and bake at 425º F for 12 to 16 minutes until bubbly and browned on top.
